Recipe: Romantic Dinner on a Budget

You asked and we listened. Here are the recipes for the dishes I featured on my recent vlog A Romantic Dinner on a Budget.

Spinach Lasagna

Ingredients:
1 pound ground beef, browned
1 jar of spaghetti sauce (use specific amount to your liking)
3/4 Tbsp. dried oregano
1/4 tsp. salt
1/2 tsp. onion
1/2 tsp. garlic powder
1/16 tsp. cayenne pepper
1/2 bag spinach
1 cup shredded mozzarella cheese
Grated parmesan

Cheese mixture:
4 oz. cream cheese
1 egg
1 cup cottage cheese

Instructions:
1. Preheat oven to 350 degrees
3. In a skillet over medium-high heat, brown ground meat and drain off fat
4. Stir together spaghetti sauce, meat, and spices
5. Mix together all ingredients for cheese mixture
6. Layer lasagna in an 8×8 baking dish with meat sauce, 1/2 of the cheese mixture, a layer of spinach, 1/2 of the shredded mozzarella, then repeat
7. Top with grated parmesan
8. Bake at 350 degrees for 40 minutes

Garlic Knots

Ingredients:
Package of raw pizza dough
8 oz. cream cheese
1 cup shredded mozzarella
1/2 cup grated parmesan
1/2 cup ricotta cheese
6 cloves garlic, chopped
1 tsp. red pepper flakes
Dried or fresh basil to taste
1/2 cup melted butter
1/4 cup fresh parsley

Instructions:
1. Preheat oven to 400 degrees
2. Roll dough into several logs and twist into a knot
3. Add knots to the edge of a buttered cast iron skillet or baking dish
4. Mix all cheeses, 3 cloves of chopped garlic, red pepper, and basil
5. Add cheese mixture to the center of the pan
6. In a separate dish, add melted butter, 3 cloves chopped garlic, and fresh parsley
7. Brush the tops of the bread knots with melted butter mixture
8. Bake at 400 degrees for 20 minutes

Brownie Trifle

Ingredients:
1 Box brownie mix (and all the ingredients listed on box)
2 1/2 cups milk
Small box of instant vanilla pudding
Small box of instant white chocolate pudding
2–3 Heath bars, crushed
Small container of Cool Whip, thawed

Instructions:
1. Bake brownies according to package direction in a 9×13 pan; then let cool
2. Beat milk and instant pudding packages on low for 2 minutes; let sit for 2 minutes
3. Fold thawed whipped cream into pudding mixture
4. Cut brownies into 1-inch squares
5. Layer trifle first with 1/2 of the brownies; then add 1/2 of the whipped cream mixture, the remaining brownies, and the remaining whipped cream mixture
6. Top with crushed Heath bars
